What you need
1 english cucumber

1 garlic clove
¼ cup fresh dill
1 tbsp fresh mint leaves

2 tbsp fresh squeezed lemon juice

1 tbsp extra-virgin olive oil
1 salt & pepper
Instructions
2 Grate the cucumber, place the shreds into a fine kitchen towel or cheesecloth and squeeze the towel to remove excess liquid from the cucumber 0 Add the shredded cucumber into a large bowl and add the greek yogurt, minced garlic, dill, mint (if using), lemon juice, olive oil, salt and pepper in a medium bowl 9 Do a quick taste test and add additional lemon juice, salt or black pepper to taste 8 Serve immediately or transfer to an airtight container and chill in the refrigeratorView original recipe
