Wonderfully sweet and sour cucumbers pickled in an Asian inspired brine.

What you need

1 cup seasoned rice vinegar

⅔ cup granulated sugar

1 tbsp ginger paste
1 tbsp fresh garlic

1 tsp salt

½ tsp white peppercorns

¼ tsp red pepper flake

0 Combine everything but the cucumbers in a medium glass bowl and whisk until the sugar and spices have been fully incorporated 1 Add the thinly sliced cucumbers and press down to ensure they are all coated in the brining liquid 2 Cover the bowl and chill in the refrigerator for at least 1 hour and up to 3 daysView original recipe
