Smash Burger Sliders

Prep the sauce…
0 Combine 1/2 cup of mayonnaise, 2 tablespoons of ketchup, 1 tablespoon of dijon mustard and 1 tablespoon of sweet relish in a small dish
2 Add a pinch of cayenne (optional) and a pinch of salt and black pepper
3 Taste and adjust if necessary
Prep the burger mixture…
5 Combine 16 ounces of ground beef with 1 tablespoon of worcestershire sauce, 1 teaspoon of mustard, 1 teaspoon of garlic powder, 1 teaspoon of onion powder and a generous pinch of salt and black pepper until everything is evenly distributed
6 Portion 1.5 ounce balls (about the size of a golf ball)
Cook the burgers…
8 Place a large cast iron skillet over medium to medium high heat and let the skillet warm up a bit
9 Very lightly oil the skillet with a neutral oil
10 Place a portion of beef onto the hot skillet, top with a small square of parchment paper and use a meat press or unslotted spatula to firmly press the burger out very thin
11 Remove the parchment paper and let the burger cook for about 60 seconds undisturbed
12 Repeat with additional portions of beef without crowding the skillet too much
13 Once the underside is crispy, flip the burgers and add a slice of provolone
14 Cook until the cheese is melted and then transfer the burger onto a cutting board to rest while you cook the remaining portions of beef
Assemble the burgers…
16 Add a patty or two into each slider bun and top with sauce and your favorite toppings
