What you need

yellow onion

fresh garlic
tart apple

baby carrots

tbsp olive oil

tsp onion powder

tsp garam masala

tsp cumin

tsp chili powder

tsp ground ginger

tsp ground turmeric
salt & pepper
cup chicken stock

cup heavy cream
tbsp maple syrup
grated parmesan cheese
Instructions
2 Preheat your oven to 425 degrees 0 Add the prepared pumpkin, onion, garlic, apple and carrots into a deep baking dish and drizzle with several tablespoons of olive oil 1 Combine 1 teaspoon of onion powder, 1 teaspoon of garam masala, 1/2 teaspoon of cumin, 1/4 teaspoon of chili powder, 1/2 teaspoon of ginger, 1/4 teaspoon of turmeric and a big pinch of salt and black pepper and generously season all of the vegetables 3 Roast the seasoned vegetables uncovered for 45 minutes or until they are very tender 4 Scoop the flesh from the roasted pumpkin and apple into a blender and add the roasted carrots and onion 10 Carefully remove the roasted garlic cloves and add them into the blender along with 2 cups of chicken stock, 1/2 cup of heavy cream and 2 tablespoons of maple syrup 11 Blend until smooth 12 Add additional stock to thin or salt or black pepper, if necessary 13 Serve garnished with a drizzle of heavy cream and some grated parmesanView original recipe
