What you need
⅓ cup white-wine vinegar

⅓ cup red onion
¼ cup granulated sugar

2 tsp honey dijon mustard

½ tsp kosher salt

1 tbsp poppyseeds
Instructions
0 Combine 1/2 cup of extra virgin olive oil, 1/3 cup white wine vinegar, 1/3 cup of chopped red onion, 1/4 cup of granulated sugar, 2 teaspoons of honey dijon mustard and 1/2 teaspoon of pink sea salt (or kosher salt) in a blender or food processor and blend until the red onion is in tiny pieces and the vinaigrette is thick and bubbly 3 Transfer the vinaigrette into a bowl and whisk in 1 tablespoon of poppyseeds 4 Serve immediately or chill in an airtight containerView original recipe
