Pancetta Egg & Cheese on an English Muffin

What you need

1 oz pancetta

1 english muffin

1 tsp salt & pepper
1 egg
1 oz havarti
Instructions
0 Make your english muffins or grab your favorite store bought ones 1 Preheat your oven to 400 degrees 2 Place your thick sliced pancetta onto a parchment lined baking sheet and bake in a 400 degree oven for 10-14 minutes or until crisp 3 Transfer the crisp pancetta onto a paper towel lined plate and set aside for now 4 Place a skillet over medium heat 5 Cook your eggs to your liking and transfer off of the heat 6 Lightly toast your english muffins and place a slice of havarti cheese over the bottom slice as soon as your pull them out of the toaster 7 To assemble the sandwiches, place a slice or 2 of crispy pancetta over the havarti, add your cooked egg and season with a pinch of salt and black pepper, top with baby arugula and the top slice of english muffin 8 Enjoy warm or wrap with parchment paper and place into an airtight container to chill until ready to enjoy (up to 4 days) 9 Rewarm in the microwave or oven wrapped in parchment until warmed throughView original recipe
