Mediterranean Quinoa & Beef Bowls

What you need

tbsp seasoned salt

tbsp olive oil

tbsp butter

garlic clove

tbsp tomato paste

red bell pepper
english cucumber
cup fresh parsley

cup cooked quinoa
tsp salt

tbsp fresh squeezed lemon juice
lemon wedge
Instructions
0 Allow the beef to come to room temperature and then slice into bite sized cubes and season generously with seasoned salt 8 Cook 2 cups of dried quinoa according to instructions on the packaging and then set aside 1 Place a large skillet over medium to medium high heat and sear the beef for 2 minutes per side 2 Transfer the skillet off of the heat and push the beef onto one side of the skillet 3 Add 2 tablespoons of butter, 2 tablespoons of tomato paste and 3 cloves of finely minced garlic and mix until combined 4 Toss the seared steak in the garlic butter and then transfer onto a plate and set aside for now 5 Return the skillet to medium heat and add 2 diced sweet peppers into the leftover beef juices and cook for 3-4 minutes 6 Add the remaining 3 cloves of finely minced garlic and the cooked quinoa and mix until combined 7 Transfer the skillet off of the heat and add the diced english cucumber, 1/2 cup of finely chopped fresh parsley and another pinch of salt and mix until everything is evenly distributed 9 Divide the quinoa between your meal prepping containers, top with the beef and add a few lemon wedges 10 Chill in airtight container.
