What you need
cup pearl couscous

cup onion

cup extra-virgin olive oil
tbsp white vinegar
cup vine ripened tomatoes

cup feta

clove garlic clove

tsp honey
cup fresh parsley

tbsp plain greek yogurt
english cucumber
tsp dried herbs
Instructions
0 Cook a cup of dry pearl couscous according to manufacturer’s directions 1 Once the couscous is fully cooked, add a tablespoon of olive oil and mix thoroughly 2 Set the couscous aside to cool while you chop the other ingredients 3 Combine the dressing ingredients in a separate bowl 4 Add the chopped tomato, cucumber, onion, feta and parsley along with the dressing into the couscous and mix until everything is evenly distributed 5 Serve warm, room temperature or chilledView original recipe
