Honey Ginger Glazed Chicken & Sweet Potato Skewers

What you need

sweet potato
sweet onion

tsp garlic powder

tsp onion powder

tsp chili powder

tsp cumin

tsp ground cinnamon

cup honey

tbsp ginger paste

garlic clove

cup soy sauce

tbsp hoisin sauce

tbsp rice vinegar
Instructions
Prep work... 0 If using wooden skewers, soak them in cool water for about 30 minutes prior to using 2 Peel your sweet potatoes and onion. Cut the sweet potatoes, onion and chicken into 1 inch cubes 3 In a small dish, combine 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of chili powder, 1/2 teaspoon of cumin and an optional 1/4 teaspoon of ground cinnamon and set aside for now 4 In a small bowl, whisk 1/3 cup of honey, 1 tablespoon of minced or pasted ginger, 2 finely minced cloves of garlic, 1/4 cup of soy sauce, 2 tablespoons of hoisin or ketchup and 1 tablespoon of lime juice or rice vinegar and set aside for now Make your skewers... 6 Bring a large pot of water to a boil 7 Once boiling, add the sweet potatoes and boil for 5 minutes 8 Drain the sweet potatoes and set them aside 9 Once the sweet potatoes have cooled enough to touch, assemble the skewers alternating between the chicken, sweet potatoes and onions 10 Generously season the skewers on all sides 11 Place a flat skillet or grill pan over medium heat and spray with non-stick cooking spray 12 Once the pan is warm, place the skewers down leaving a little bit of space between each one 13 Cook on the first side until the underside is golden brown (about 3-4 minutes 14 Flip the cooked side up and brush with the honey ginger glaze 15 Continue flipping and glazing until the chicken is cooked through and the edges are crisp and deeply brownedView original recipe
