Grilled Corn Salsa

A bright, sweet corn salsa with a little bit of char, a kick of tang and just a whisper of heat. Just like my favorite Chipotle salsa.

What you need

cup red onion

cup fresh cilantro

jalapeno

fresh lime juice

salt & pepper

0 Use a sharp knife to remove the kernels from 4 medium sweet corn cobs 1 Place a large skillet over medium to medium high heat and allow it to warm for a few minutes 6 Add the corn kernels into a warm, dry skillet and cook until lightly charred 2 Transfer the skillet off of the heat and add 1/4 cup of finely minced red onion, 1/3 cup of finely chopped fresh cilantro, the juice of a large lime and a generous pinch of sea salt and black pepper 3 Add some tajín seasoning (optional) 4 Mix until combined and enjoy!View original recipe
