Greek Lamb Pita Sliders

What you need

cup red onion
garlic
tbsp fresh parsley

tbsp fresh squeezed lemon juice
tsp salt
tsp ground coriander

tsp black pepper

tbsp olive oil

Instructions
0 Combine 16 ounces of ground lamb with 1/4 cup of finely grated red onion, 2 cloves of finely grated garlic, 2 tablespoons of finely chopped parsley, 1 tablespoon of freshly squeezed lemon juice, 1/2 teaspoon of salt, 1/2 teaspoon of ground coriander and 1/4 teaspoon of black pepper in a bowl until the ingredients are evenly distributed 1 Divide the mixture into 8 portions and form into evenly thick disks 2 Place a large skillet over medium to medium high heat and add 2 tablespoons of olive oil 3 Once the skillet is very warm, add the burgers and cook for 2-3 minutes on the first side 4 Once a crisp crust has formed under on the underside, flip the burgers and cook to your desired level of doneness (135 degrees for medium) 5 Open 8 mini pitas and spoon a small amount of tzatziki onto the bottom portion of each pita 6 Add the lamb burgers and top with red onion, tomatoes, baby arugula and crumbled feta 7 Drizzle with additional tzatziki and enjoy!View original recipe
