What you need

tsp baking powder

tsp vanilla extract

cup granulated sugar

tbsp lime zest

cup sweetened shredded coconut

cup all purpose flour

cup buttermilk

tsp salt
cup vegetable oil

tbsp fresh lime juice

0 Preheat your oven to 350° 1 Grease and line an 8”x4” loaf pan with parchment paper 2 In a large bowl, whisk 1/3 cup of a neutral oil with 3/4 cup of buttermilk, 2 large eggs and 1 teaspoon of vanilla extract 3 Add 3/4 cup of granulated sugar and 2 tablespoons of fresh lime juice and mix until well combined 4 Add 2 cups of all purpose flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/4 teaspoon of salt and mix until just combined 5 Mix 1 cup of sweetened shredded coconut and 1 teaspoon of fresh lime zest until evenly distributed 6 Pour the batter into the prepared loaf pan and bake in a 350° for 45-48 minutes or until a toothpick comes out of the center clean 7 Let the loaf cool in the pan for 15-20 minutes before slicing 8 Store leftovers in an airtight container at room temperature for up to 4 daysView original recipe
