Instructions
Make the ground beef... 1 Add 8 ounces of ground beef into a medium skillet over medium heat along with a crushed garlic clove, a teaspoon of taco or steak seasoning and a tablespoon of tomato paste 2 Cook until browned and cooked through and then set aside Make the pico de gallo... 4 Combine diced tomato, red onion and jalapeño with finely chopped cilantro in a small bowl 5 Add 1 tablespoon of fresh lime juice and a pinch of salt and black pepper and set aside for now Assemble the bowls... 7 Divide the cooked rice and shredded lettuce between 2 shallow bowls 8 Top with ground beef, rinsed corn and black beans, pico de gallo and cheese 9 Serve with flour tortillas, sour cream and lime wedgesView original recipe
