Baked Citrus Doughnuts

What you need

1 cup granulated sugar

1 egg nog

1 tsp vanilla extract
¼ tsp lemon extract

1 ½ cup all purpose flour

2 tsp baking powder

¼ tsp salt

¼ cup full fat milk

1 tbsp blood orange zest

¼ cup fresh lime juice

¼ cup fresh orange juice

1 ½ cup confectioners sugar

0 Preheat your oven to 350 degrees 1 Vigorously whisk 8 tablespoons of room temperature butter with 1 cup of granulated sugar in a large bowl until pale in color and creamy 2 Add 2 eggs, 1 teaspoon of vanilla extract and 1/4 teaspoon of citrus extract and whisk to combine 3 Add 1/4 cup of whole milk and mix to combine 4 Add 1 1/2 cups of all purpose flour, 2 teaspoons of baking powder and 1/4 teaspoon of salt and mix until just combined 5 Gently whisk in 1 tablespoon of citrus zest, 1/4 cup of lime juice and 1/4 cup of clementine juice 6 Grease a doughnut tin and fill each cavity half way with batter 7 Bake the doughnuts in a 350 degree oven for 8-20 minutes (depending on the size of the doughnuts) 8 Transfer the doughnuts out of the tin directly onto a cooling rack to cool fully before frosting 9 Combine 1 1/2 cups of confectioners sugar with enough fresh citrus juice to develop a glaze consistency (2-3 teaspoons) 11 Dip or drizzle the cooled doughnuts into the citrus glaze and enjoy! 12 Store leftovers in an airtight container at room temperatureView original recipe
