Blackened Curry Chicken Sandwich

What you need

cup tzatziki sauce
cup arugula leaves

fresh tomatoes

0 Pound 4 boneless skinless chicken cutlets into even thinness, drizzle with olive oil and generously season with your favorite curry spice blend 1 Place a large skillet over medium to medium high heat and grill the chicken for 4-5 minutes on the first side or until it is deeply golden brown and crisp 2 Flip the chicken and continue to cook until the chicken is cooked through with no pink and an internal temperature of 165 degrees 3 Once the chicken is cooked through, transfer it to a cutting board to rest while you prepare the other ingredients 4 Slice a loaf of soft french bread into quarters, slice each quarter in half length wise and remove some of the thickest portion of flesh to create room for our sandwich filling 5 Spread some tzatziki sauce on one or both sides of bread, add a blackened curry chicken cutlet and top with lettuce, tomato and red onion 6 Close the sandwich and secure with toothpicks 7 Slice each sandwich in half and serve with chipsView original recipe
