Combine everything in the bowl of a stand mixer or a large mixing bowl, if using an electric hand mixer
Start mixing on low speed until the sugar and cinnamon are incorporated and then increase the speed to medium
Whip until soft or stiff peaks have developed
Use immediately or chill in an airtight container
