Pico de Gallo
Refried Black Beans
Spicy Ground Beef
Assembly
Make the pico de gallo...
Combine diced tomato, red onion and jalapeño with finely chopped cilantro in a small bowl
Add 1 tablespoon of fresh lime juice and a pinch of salt and black pepper and set aside for now
Make the refried black beans...
Add a 15oz can of black beans into a skillet over medium heat
Add 1 crushed garlic clove and a pinch of cumin, onion powder and chipotle seasoning and bring to a simmer
Add a tablespoon of butter and mash most of the beans
Reduce the heat to low and allow the beans to reduce while you prepare the remaining ingredients
Make the spicy ground beef...
Add 8 ounces of ground beef into a medium skillet over medium heat along with a crushed garlic clove, a teaspoon of taco or steak seasoning and a tablespoon of tomato paste
Cook until browned and cooked through and then set aside
Make your blistered corn and eggs...
Blister 6 ounces of corn in a dry skillet and set aside
Cook your eggs to your liking
Assemble the huevos rancheros...
Top your tortillas or tostadas with refried black beans, ground beef and eggs
Top with blistered corn, pico de gallo and sour cream
Garnish with crumbled queso fresco, fresh cilantro and lime wedges
Enjoy!
