Baked Oats with Bananas

Moist, tender baked oats with flax seeds, chia seeds, bananas and chocolate chips. The perfect protein and fiber filled breakfast!
Preheat your oven to 350 degrees
In a large bowl, combine 2 1/4 cups of your favorite milk, 2 large eggs, 1 teaspoon of pure vanilla extract and 1/3 cup of pure maple syrup or honey and mix to combine
Add 2 1/2 cups of old fashioned oats along with 1/2 cup of ground flax seeds, 1/4 cup of chia seeds, 2 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg (optional), 1 teaspoon of baking powder and 3/4 teaspoon of salt and mix until fully combined
Fold in 3 large diced bananas and 1/2 cup of mini chocolate chips until evenly distributed
Divide the mixture between 4-5 greased baking dishes
Bake in a 350 degree oven for 35-40 minutes or until the oats feel set and springy to a light touch
Allow the oats to cool for about 15 minutes before covering and chilling
Microwave uncovered for 60-90 seconds to reheat
